2nd May 2023- King’s Coronation

In preparation for the King’s Coronation on Saturday 6th May, we made scones. First we put 225g of self-raising flour and 2tsp of baking powder into a mixing bowl. We then each got 50g of butter which we cut into small cubes and then took turns in groups of three rubbing it into the flour.
Once we had a breadcrumby texture we added 2tsp of caster sugar. We then broke an egg into a mug, being careful to remove any pieces of egg shell and added 100ml of milk. Once we had stirred this up nicely with a fork we added the liquid gradually to our bowl till we had a soft dough. We then took it out and patted the dough to about 2cm thickness. We cut out circles of dough and after brushing them with milk, put them into the oven for 10mins. While they were baking we washed up our bowls and other things. Once they were baked we ate them with clotted cream and strawberry jam.

When we finished, we made some paper bunting to hang up for the coronation.

14th July 2020 – virtual sports day and mug cakes

Since this was the last meeting of the term we had a virtual sports day using the cards from Wesport (https://www.wesport.org.uk/active-education/school-games/2020-summer-virtual-school-games/).
We did 5 activities (Athletics – Speed Bounce, Cricket – Clap and Catch, Gymnastics – Tuck in tuck out, Netball – Around the World and Tennis – Tap up). Half the Brownies did it the activity at a time which gave the others a chance to have a drink of water and get ready as it was thirsty work!

Afterwards we made chocolate mug cakes (no mixed health message there!).

Chocolate Mug Cakes
Recipe:
To a microwave/oven proof mug add:
2 tablespoons of self raising flour
1 tablespoon of cocoa
1 tablespoon of sugar
1 tablespoon of oil (vegetable/sunflower/olive)
2 or 3 tablespoons of milk.
Mix well and put in microwave (on a piece of kitchen roll with another piece covering or with a light cover on top) for 90 seconds on full power. Alternatively put in an oven (180degrees C/Gas Mark 4 for 15-20mins or until it starts to smell like it’s done!).

The intention of this booklet is to collect different methods of “Outdoor Cooking” together into
one place, so that Guides and Guiders – in fact all members of WAGGGS – can print one

Peppermint creams (Christmas recipe)

Quantities for each six. Makes about 50

400g icing sugar
1tblsp condensed milk
1tsp Peppermint flavouring

Mix all together.  Roll out flat. Cut out shapes using small pastry cutters.
Leave to dry.

Sugar mice (Christmas recipe)

Icing sugar
Condensed milk
Pink food colouring
Powdered egg white
Strawberry laces (for tails)

Mix ingredients together to form a fondant dough. Shape into a ball, pinching one end gently into a cone. Attach two tiny flattened balls for ears and a strawberry lace for the tail. Chill.

Alternatively use fondant icing sugar and make into a stiff dough using a little water. (Fondant icing sugar has glycerine added so is more malleable.

Chocolate truffles

For each Brownie

2 fairy cakes out of their wrappers into a bowl.
Crumble them up with your hands into small pieces.
Add 1 tsp orange juice if want them with a flavouring.
Add 1 tsp or either chocolate spread (check for nut allergies) or ready made icing.
Mix up with your hands and make into a dough.
Roll in chocolate vermicelli or sugar sprinkles.
Serve in paper cake cases.

Freshly squeezed orange juice

Allow 2-3 oranges per Brownie.
Cut oranges in half. Squeeze using a juice squeezer.

Fruit salad

Use a variety of fruits:
Melon, pineapple, grapes, strawberries, apples, mango, kiwi
Cut into pieces and mix together (with a little orange juice if desired).

Rainbow fruit kebabs

Use a variety of firm fruits: banana (yellow), melon (orange), strawberries (red), grapes (purple), kiwi fruits (green). Cut into bite sized chunks and thread carefully onto skewers. Can include marshmallows as well.
For a rainbow: purple grapes, green kiwi, yellow banana, orange satsuma, red strawberry. Get a marshmallow if you make a rainbow. Can dip in chocolate sauce.

Pancake decorating

Buy ready made (chilled section of supermarket) and decorate – ask each brownie to bring in things to share and decorate their pancake with (e.g sprinkles, dried or fresh fruits, syrup)

No-cook fudge

6oz softened butter
1 small can sweetened condensed milk (approx 6oz),
1 3/4 lb sieved icing sugar.

Mix the butter and condensed milk. Gradually add the sieved icing sugar.
When mixed, turn out and knead until it is smooth and easy to handle.
Roll out the fudge with a rolling pin to a thickness of 1/2 inch and cut into squares.

Mackerel or sardine pate

1 tin of mackerel or sardines in oil.
½ tub cream cheese (about 1 tablespoon per fish)

Drain the mackerel  and put into a bowl. Mash with a fork, till smooth. Add the cream cheese and mix well.  Best to use 1 fish per 2 or 3 girls so 1 tin will give 2-3 fish.
This pâté makes a tasty sandwich filling, or try it with oatcakes and vegetable sticks for a packed lunch or picnic.

Armpit fudge

To make a single portion, you’ll need:

  • 50g  icing sugar (about 5 heaped teaspoons)
  • 1 tablespoon butter (15g)
  • 2 teaspoons cream cheese
  • A dash of vanilla essence
  • 2 teaspoons cocoa

What to do:

Place all ingredients in a sandwich-size plastic zipper bag, squeeze out all of the air and ensure it’s tightly sealed. Place the bag in your armpit and squish and jiggle it until all the ingredients are well mixed and it has a creamy consistency. To make it extra tasty, you can add in some extra flavours like raisins or mini-marshmallows. The mixture should be ready to eat, so grab a spoon and enjoy! Can also spread on a digestive biscuit if it’s very squishy.

Access to oven required OR make in the meeting place and take home to bake

Biscuits (ingredients for 3 Brownies – makes about 12 small biscuits)

50g sugar (if you don’t have sugar, use 50g of drinking chocolate instead and make chocolate-y biscuits instead)
100g butter
150g flour

Mix butter and sugar up in a bowl (using spoon). Add the flour. Mix with hands to get to a dough. Can add a little water if needed.
Shape into biscuits or cut out shapes. Can use mini smarties to decorate before baking in the oven.
Bake in the oven 15-20mins (depending on the size/shape of biscuits)

Painted biscuits – These biscuits can be painted before putting in the oven which is fun for pack holiday – make ‘paint’ by mixing food colouring and egg yolk together. Girls can then paint their biscuits using clean (new) paint brushes before they go in the oven. Red and Green are good colours which come out strongly.

Stained glass biscuits

Flatten and cut out shapes and cut holes in the middle. Smash up boiled sweets in a bag. Sprinkle bits into hole. Ephiphany tart (for January)

For each group of three: 200g plain flour + 100g butter. 6 jars (3 different jams, strawberry, blackcurrant, lemon curd) of jam for 18 girls.

Give out flour, give out butter.
Girls cut up butter and rub it into the flour. Add small amounts of water to make a dough.
Make pie tins out of foil (can use double layer of thick/strong foil and an existing pie dish as template).
Split dough into 3.
Each girl flattens her pastry and puts it into their pie dish. Use trimmings to make divisions like a star.
Fill each section with jam.
Bake in oven 20mins.

Apple dumplings

Take an apple
Wash it. Make a hole in the top either with an apple corer or can use a knife/spoon depending on how soft the apple is.
Mix up dried fruit, butter, sugar and cinnamon. Spoon the mixture into the apple.
Make shortcrust pastry and wrap the apple up in it.

Pear strudel

Take 1 pear for 2 brownies. Peel and core and cut into 1cm cubes.
Toss the pears with 1 tblsp raisins, 2 tsp sugar and 1/4 tsp ground cinnamon in a bowl with a pinch of salt.
Take 1/2 sheet filo.
Lay out with one of the shorter ends towards you; brush all over lightly with melted butter. Spoon 1/2 of the pear mixture in a horizontal line at the bottom of the sheet. Roll up like a cigar and trim the ends. Reshape to keep the cylindrical shape then make 2 slits at the top (to let the steam escape). Brush lightly all over with butter, then place on a parchment-lined baking sheet.
Bake for 15-20 minutes, 200 deg C/Gas mark 6, until golden. Cool for 10 minutes before serving.

Soda bread

Between 3 girls:

  • 450g flour, 1tsp bicarb of soda, 1 tsp salt, 300ml liquid (either buttermilk or 150ml milk+150ml plain yogurt mixed together)
  • Mix dry ingredients in bowl. Add milk mixture and enough warm water to make a dough.
  • Knead and shape into a round bun shape. Put a cross on top.
  • Bake in preheated oven 200deg C for 20-30 mins, then turn upside down in oven and bake for another 10-15 mins till bread sounds hollow when tapped on the bottom.

Scone pizza

8oz self raising flour
2 tablespoons olive oil
150ml water

Tomato puree
Dried oregano/mixed herbs
Grated cheese

Preheat oven to 200C/Gas mark 6.
Put flour, water and oil in a bowl and mix to a dough using forks.
Turn the dough out onto a clean, lightly floured surface.
Sprinkle some flour on top of the dough and make into a ball. Divide into two.
If you’d like round bases, get the base of a cake tin, pop some baking paper top and then place one of the balls onto it.
Use a rolling pin to get nice, round bases.
Now you are ready to decorate your pizza. Smear the sauce over the bases, leaving a nice edge.
Sprinkle on cheese
Once ready, pop into the preheated oven for 12-14 minutes.

Lemonade scones

400 g (14oz) self-raising flour, plus extra to dust
175 ml (6 fl oz) double cream
175 ml (6 fl oz) lemonade

Preheat oven to Gas Mark 7/220 C.
Put all ingredients into bowl and mix well (may be very sticky so add more flour)
Roll out on floured work surface
Cut out rounds of 2inch (3-4cm) thickness
Put on baking tray and bake 12-15mins.
Cook on rack and serve with clotted cream and jam.

Pizza in a mug

Ingredients for mug pizza
4 level tablespoons flour
1/8 teaspoon baking powder
Pinch of baking soda
Pinch salt
3 tablespoons milk
1 tablespoon olive oil
1 tablespoon tomato puree (or passata) – passata works best
2 tablespoons grated cheese (mozzarella or cheddar would work well)
Mini pepperoni chopped or ham if you prefer a meaty option
Dried herbs (optional)
You will.also need a 6 oz mug 

Mix flour, baking soda, baking powder and salt together
Add milk and oil together mix up (there might be lumps but that’s ok)
Spoon on marinara (tomato sauce) over the surface of the batter
Sprinkle with cheese, pepperoni(ham/mushrooms or whatever you like on a pizza)
Microwave for 1 minute 10 seconds until it rises and cheese bubbling

Microwave chocolate mug cake

To a microwave/oven proof mug add:

Chick pea nibbles (great for India topic)

1 tin of chickpeas (per 3 girls)
1-2 tablespoons vegetable oil or olive oil
1 tsp ground paprika
1 tsp ground cumin
1tsp ground coriander
salt
(ground spices can be replaced with what you have to hand. e.g garlic powder, smoked paprika)

Preheat the oven to 190 degrees C (Gas 5).
Empty chickpeas into a sieve and drain and rinse under the tap.
Put oil into small bowl. Add spices and mix well.
Pour chickpeas into a bowl and add the spice mix.
Stir till well coated.
Pour chickpeas into a baking tray and bake for 20-30mins.
When cooked, remove from oven, sprinkle with salt, cool and eat.

Tortilla cups (Mexican theme)

2-3 flour or corn tortillas
grated cheese
jar of salsa, tomato sauce or chopped tomatoes
Choice of: peppers, mushrooms, sweetcorn, olives, cherry tomatoes, chilli, cooked minced beef, refried beans, tinned kidney beans, spring onions, cooked ham, cooked bacon, avocado etc.
sour cream
spray oil

Equipment
muffin tray OR foil cake cases
vegetable knife
chopping board
spoon

Turn oven to 180 C (gas 6)
Cut tortilla into 4 quarters
Put a little oil into muffin tray
Press quarter tortilla into muffin hole so it looks like a cup
Chop chosen meat/veg into small pieces
Into each cup put one teaspoon of tomato (salsa/chopped tomatoes/sauce)
Then put two teaspoons of your veg/meat mixture (cut should be 3/4 full)
Put another teaspoon of salsa in
Top with grated cheese
Put in the oven for 15mins
Take tortillas out carefully and let cool a bit
To serve, top with sour cream and little paprika

Semolina halva (great for India topic)

Recipe for Sooji Halwa

  • 2 pans on the stove.
  • Pan 1: Put in 3 teaspoons of ghee, 6 tablespoons of semolina and a small handful of sultanas.
  • Mix well.
  • Pan 2: Measure in 175 ml of water, 30 ml of milk and 6 teaspoons of sugar. Stir gently and heat.
  • When the contents of Pan 2 are hot, add it, one ladle at a time to Pan 1.
  • Keep stirring the contents of Pan 1 until all the liquid has been absorbed and it has the consistency of ‘smooth mashed potato’. It will start to come away from the sides.
  • Pour into a serving plate and flatten with a spoon to make it look nice.
  • Serve warm and enjoy!

Apple crunch

Make apple puree (allow 1 apple per girl, peel and core beforehand and simmer in the meeting place with a little water to make a puree. Will take some time so could do this beforehand as long as apple puree doesn’t go brown, and then do a demo in the meeting place so the girls can see how it’s done).

Per girl:
1 apple
Per group of three:
50g butter, 2 tblsp golden syrup, 40g cornflakes

  • Melt together butter and syrup on the stove. Add cornflakes and stir till well mixed together.
  • While waiting for the stove, girls should mash up apples (unless puree already made) and spoon into a plastic cup. Could also decorate paper sleeve to go around the cup.
  • Once cornflakes are done, add them on top of the puree.

Blackberry campfire crumble

Peel and chop soft fruits and soften in a pan over the campfire.
Share out into cups or mugs.
Break up and sprinkle digestive biscuits over the top.

Butter, chocolate, golden syrup, digestive biscuits, mini marshmallows
Crush biscuits.
Melt butter, chocolate, syrup.
Add biscuits.
Pour into greased tray. Stick marshmallows on top.

Cook marshmallows over tea lights till melting. Sandwich between two chocolate digestives.

Campfire Bread/Dampers

Mix flour and water into a dough. Knead and shape into a flat piece or a shape.
Wrap in foil and cook over a fire. Or roll into a spiral and spear on two skewers and cook.

Mock Angel Food

White bread
Sweetened condensed milk
Desiccated  coconut

Break the bread into chunks and dip into the sweetened condensed milk and then roll into the coconut. Stick on a roasting stick and roast like a marshmallow.

Hobo Stick Popcorn

1 long stick
18″ square of foil
1 tsp. cooking oil
1 Tblsp. unpopped popcorn

Put the cooking oil and popcorn in the center of the foil. Bring the foil edges up forming a pouch. Seal the edges. Tie the pouch to the stick. Hold the pouch over the coals. Shake constantly until corn stops popping. Open foil carefully and add butter and salt or any flavor you desire.

Or use a foil tray. Put vege oil and popcorn in tray. Cover with another foil tray (use clothes pegs to keep together)

or use foil over the top and fold to allow expansion. Hold over tea light heater

Pocket pizzas

  • 1 pitta bread each
  • tomato puree
  • grated tasty cheese
  • whatever else you want to put in it (ham, sweetcorn)

Method

  • Cut each pitta in half (that is, split it open, not cut it into a half circle).
  • Spread the tomato sauce inside. Add cheese, ham, and other toppings.
  • Wrap in foil and place in coals.
  • Cook for one or two minutes, flip, and cook another minute or two.
  • If everyone makes the same, it’s not a problem if you pick up someone else’s. If different people make different pizzas, either note where you put yours in the coals, or make a special fold in the foil, or use some other marker.

Ice cream in 10 mins in a bag

  • 1 cup milk
  • 1.5 tablespoons sugar
  • 1/2 teaspoon vanilla
  • 2–3 cups ice, crushed or cubed
  • 1/3 cup salt
  • 1 small plastic ziplock bag
  • 1 large plastic ziplock freezer bag
  1. Combine milk, vanilla, and sugar in the small plastic bag. Seal bag tightly, making sure to press out any air trapped inside the bag. Make sure no holes develop!
  2. Mix ice and salt in the large plastic bag
  3. Place the small bag into the large plastic bag and seal tightly.
  1. Shake the bag vigorously for about 5 minutes. You can have fun tossing it around with friends, but you might need to wear winter gloves as the bag will be very cold.
  2. After about 5 minutes, you will see that the liquid inside the smaller bag has hardened. Without opening the bags, let them sit on a plate or towel for another few minutes, rearranging the ice in the larger bag so that it’s surrounding the smaller bag.
  3. Open them up and scoop out the ice cream from inside the small bag. Serve immediately.
